Taking part in Veganuary doesn’t mean you have to miss out on delicious brunch or fancy breakfast options. Why not use some of the incredible local Dorset produce to create this decadent Vegan French toast, perfect for those cold weekends when you want breakfast in bed!
Ingredients:
6 slices of thick white bread – make it even more special by picking up fresh bread from one of our bakers
3tbsp maple syrup
Optional 150g blueberries/strawberries. You can find fruit here. Alternatively use banana slices or chocolate sauce
2tbsp gram flour
2tbsp ground almonds (you can leave these out if you are preparing these for someone with a nut allergy)
2 tsp cinnamon. Find other spices here.
200ml plant-based milk – rice milk, almond milk or oat milk would all work well.
1 tbsp golden caster sugar
1tsp vanilla extract
Oil for frying (find oils here.)
Icing sugar for dusting.
Method:
If you’re planning to top your toast with berries, start by heating the maple syrup and blueberries or strawberries in a saucepan until they start to pop and release their juices, then set these to one side.
Otherwise, in a shallow bowl, mix together the flour, cinnamon, milk and vanilla. If you want to add the almonds, do so here.
Heat a little oil in a frying pan, while the pan is heating up, dip a slice of the bread into the milky mixture and try it on both sides until it browns and crisps at the edges. You can keep each slice warm as you cook each piece by putting the oven on low and leaving the slices on a tray.
Once the slices are cooked, spoon the berries or banana and chocolate over the top and dust with icing sugar, then serve and eat immediately.
