As we start heading into the warmer months of the year, you’re likely going to feel less inclined to spend your time in the kitchen, so take a look at this varied and filling salad, amazing on its own or as an accompaniment for BBQs, picnics and those picky teas we all love.
Ingredients:
400g black beans
2 spinach
500g tomatoes
½ cucumber
1 mango
1 red onion
6-8 radishes
2 avocados
100g feta (or something similar)

Method:
Start by washing and preparing the various elements, make sure to peel and chop the mango, cut the cucumber lengthways and scoop out the seeds. Chop the tomatoes into large chunks and roughly chop the spinach.
Get your plate/bowl or platter, drain the beans and scatter them with the spinach over the base. Arrange the tomatoes, cucumber, mango, onion and radishes on top, gently mixing with your hands. If you want to add sauces and dressings, do so at this stage.
Peel and slice the avocado, placing it on the top with crumbled feta or similar cheese. Add any herbs you like and then serve.
