If you’re stuck indoors during these trying times, you might be opening and closing your cupboards wondering what you can rustle up for dinner using just the ingredients you already have. This series of recipes help you use up those items you might have ignored for a while and are great on a budget!
Cheap, easy to make and you don’t even need to turn on the oven! This microwave chilli is full of protein, so even when you’re raiding your cupboards, you can be sure of a healthy meal.
Ingredients:
½ an onion
1 garlic clove
A knob of butter
400g chopped tomatoes
400g kidney beans
1 stock cube
2 squares of dark chocolate
A sprinkle of herbs and spices, eg cumin, chilli powder.
Method:
Finely chop the onion, crush the garlic and add with butter and spices to a microwavable container. Give it a quick stir, heat in the microwave on high for 40 seconds, leave to stand for 1 minute.
Drain the chopped tomatoes and keep the juice to one side, drain and rinse the kidney beans, add with the stock cube and chocolate to the container.
Cover with cling film and pierce, place some kitchen paper on the microwave plate and put the container on top. Heat on high for around 2 minutes, stir and leave to stand for a minute. Add the reserved tomato juice and return to the microwave for two minutes. Stir and leave to stand for one minute.
Should you want to, you can add cream or cheese before serving.
