Gingerbread biscuits

Winter is the season for gingerbread, spice and things nice and as gingerbread biscuits are easy and fun to make, gather the kids together and make a little gingerbread family! Either shape them using people shaped cutters or just shape them like usual biscuits – whatever you prefer!

Ingredients

300g plain flour
60g brown sugar
60g butter
90ml golden syrup
2 tsp ground ginger
1 tsp mixed spice
1 egg yolk
2 tsp bicarbonate of soda

Don’t forget to check here for all the spices you need and you can get your dairy supplies from here.

Method

Start off by sorting your dry ingredients and sieve the flour, ginger and mixed spice into a large bowl.

Put this aside and add the butter, golden syrup and sugar together in a saucepan and stir over a low heat until it has melted together.

Add the bicarbonate of soda to cold water and stir, then add it, the egg yolk and the butter mixture to the flour and stir well.

Once the dough is combined and it is cool to touch, start kneading with your hands until it is shaped into a large ball – make sure you have clean hands for this bit!

Wrap your dough in cling film and put it in the fridge for around 15 mins to half an hour until it is firm.

Once the dough is ready, put the oven to 180c and lightly flour your work surface and roll out your dough to around 5mm thick.

Collect your cutters together and press out the shapes you want, then place them on a greased baking tray – make sure to spread them out as they will expand during baking. Depending on the size of your shapes, you may need to cook them in batches.

Put them in the oven for around 15 minutes.

Once cooked, leave them on the side to cool. Depending on what shapes you’ve gone for now is the time to decorate them! Use icing to pipe on faces, buttons and other designs or to stick festive sweets to them.
