Frittata with cheese, peas and beans | Store cupboard recipes

If you’re stuck indoors during these trying times, you might be opening and closing your cupboards wondering what you can rustle up for dinner using just the ingredients you already have. This series of recipes help you use up those items you might have ignored for a while and are great on a budget!

When in doubt, make an omelette and if you’re going to make an omelette, why not make it a fancy one? This recipe is filling and you’ll easily find the ingredients in your fridge and cupboard. You can even swap out what kind of cheese or beans you use so you can tailor it to what you have in stock.

Ingredients:

300g frozen peas and beans
8 eggs
1 splash of milk
100g cheese

Method:

Start by heating your grill to a medium setting.

In a saucepan, boil the peas and beans for about four minutes until just tender then drain well, leave to the side.

In a bowl beat the eggs with a splash of milk and season to your taste. Slice about half the cheese and then roughly chop or crumble the rest into pieces. Leave a few slices aside and stir the rest into the eggs and add the beans and peas.

Lightly oil an ovenproof pan and place on the heat. Pour in the mix and gently cook for around 10 minutes, top with the remaining cheese slices and put until the grill until set, golden and bubbling.
